frosted banana bars

Frosted Banana bars

Great tasting banana bars that are moist and sweet. Frost with cream cheese icing. Great for potlucks.

Ingredients:

1/2 cup butter, softened

1 1/2 cups white sugar

2 eggs

1 cup sour cream

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1 cup mashed ripe bananas

1 (16 ounce) container cream cheese frosting

Directions:

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch jellyroll pan.

2. In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, and then stir in the sour cream and vanilla. Combine the flour, baking soda and salt; stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared pan.

3. Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Allow bars to cool completely before frosting with the cream cheese frosting.

Frosted Banana Bars

2/3 C. Sugar

1/2 C. Sour Cream

2 T. Butter, softened

2 egg whites

3/4 C. mashed banana (about 2)

1 C. flour

1/4 tsp. salt

1/2 tsp. baking soda

2 T. Finely chopped walnuts(optional)

1 tsp. vanilla

Heat oven to 375. Spray 9x9" pan. Beat sugar, sour cream, butter, and egg whites in large bowl 1 minute on low speed, scraping bowl occasionally. Beat in bananas and vanilla on low speed 30 seconds. Beat in flour, salt, and baking soda 1 min. spread in pan. Bake 20-25 minutes until light brown. Cool completely.

Frosting

1 1/4 C. powdered sugar

1 T. butter, softened

1/2 tsp. vanilla

1-2 T. milk

Frosted Banana Bars (from Taste of Home)

½ cup butter, softened

2 cups sugar

3 eggs

1-1/2 cups mashed ripe bananas (about 3 medium)

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

Dash salt

Cream Cheese Frosting:

1 package (8 ounces) cream cheese, softened

½ cup butter, softened

4 cups confectioners' sugar

2 teaspoons vanilla extract

or, Powdered Sugar Glaze:

1 1/4 C. powdered sugar

1 T. butter, softened

1/2 tsp. vanilla

1-2 T. milk

In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in the eggs, bananas and vanilla. Combine the flour, baking soda and salt; stir into creamed mixture just until blended. Transfer to a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack.

For frosting, in a small mixing bowl, beat cream cheese and butter until fluffy. Add confectioners' sugar and vanilla; beat until smooth. Frost bars. Yield: 3 dozen.
