Chicken pillows

I was a bit skeptical on these but decided to try them. My 10 year old said they were the best and asked if she could have some for breakfast.

3 c cooked shredded chicken
8 oz cream cheese
1/4 c butter
Crescents ( I used two packs)
1 sleeve ritz (or any crackers) crumbs
1 egg

Mix chicken with butter and cream cheese then put in the crescents and seal well. Put egg in a bowl with a few Tbsp water and mix. Put cracker crumbs in another bowl. Dip each pillow into egg then crumbs and lay on cookie sheet. Do that to all then bake at 400 for 20 min. Serve with cream of chicken soup warmed with as much milk as you want for the thickness.

Chicken Caesar Salad Sandwiches

These are the easiest and really only take about 10 min of prep time!


Place chicken breast/tenderloins in the crockpot with about 2 c. water. I did 1 very Large breast and it was more than enough for 5.
after it has cooked on low 5-6 hours or more drain the water and shred the chicken and return to the crock pot. Add 1/2 C. caesar dressing. you may need more or less depending on the amount of chicken. you just want it coated but not drenched in the dressing. add 1/2 c. fresh shredded parmesan (NOT the powdery stuff you use on spaghetti!!) then return to pot and cook on high 30 min. Serve on buns with lettuce.

Benihana rice


I LOVE Benihana chicken fried rice!! I found this recipe and HAD to try it. Its really close to the same taste!!

2 ounces cooked chicken
8 ounces steamed rice
2 eggs
2 tablespoons onion, chopped
2 tablespoons carrot, chopped
2 tablespoons green onion, chopped
2 tablespoons green peas
1 teaspoon sesame seed
3 tablespoons butter
1 teaspoon oil (use for cooking veggies)
2 teaspoons soy sauce (or more to taste)
6 pinches pepper
2 cloves minced garlic
1 tsp fresh grated ginger
Sesame seeds
Salt to taste


Directions:
- Scramble eggs and chop after cooking.
- Saute chopped onion, green onion, seasoning and carrot
 Saute chopped onion, green onion, seasoning and carrots in the oil until done and mix with chopped scrambled egg and chicken. 
- Break off chunks of steamed rice and mix with vegetable, egg and chicken. 
- Add sesame seed, minced garlic, ginger, salt and pepper, stirring well. 
- Add butter and soy sauce into the mixture, stirring well until done.

Chicken Curry Soup


2 lb chicken cooked and shredded
1 large onion finely chopped
2 large carrots finely chopped
1 celery stalk finely chopped
3 garlic cloves crushed
1 tsp crushed ginger
1 can crushed tomatoes
1 tbsp coriander
2 tsp cumin
2 tsp paprika
2 tsp tumeric
1/2 tsp nutmeg
1/2 tsp cloves
1 bay leaf
1 tsp sugar
1 1/2 c. chicken stock
1/2 C. cream
salt and pepper to taste

In a large pot fry the onion, carrots and celery in a bit of olive oil until soft.
add garlic and ginger fry for another min before adding tomatoes and spices. cook 2 minutes. add sugar and stir into spicy mixture. add chicken and stir to coat well. pour in stock and let soup simmer about 10 min or until veggies are cooked.

Baked Creamy Chicken Taquitos



1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic, or garlic powder
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken
1 C grated pepperjack cheese
small corn tortillas (and actually, flour ones are really good as well)kosher salt
cooking spray

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.
Heat cream cheese in the microwave for about 20-30 seconds so it’s soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.
You can prepare up to this step ahead of time. Just keep the mixture in the fridge.
Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or are coming unrolled right away, just try heating them longer and try the paper towel thing.
Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.
Then roll it up as tight as you can.
Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray or an oil mister and sprinkle some kosher salt on top.
Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.

These are really yummy dunked into Cilantro Lime Ranch Dressing.

For the dressing:
1pk dry ranch dressing mix
1 C. mayo
1/2 C. milk
1 lime
2 garlic cloves minced
1/2 C. chopped cilantro
4 anaheim peppers
throw everything into a blender and mix well.

Chicken and Cheese Lasagna Roll ups

anywho here is the recipe. These were really yummy!

3 C. chopped cooked chicken
1 C. cottage cheese
1/4 C. feta cheese (i used goat cheese)
1/4 grated parmesan cheese
1/4 C. milk
1/8 tsp pepper
10 lasagna noodles
2 C. spaghetti sauce

In a medium bowl combine the chicken, cheeses, milk and pepper. Spread 1/2 mixture on each noodle; roll jelly roll fashion. In a 913 pan spread 1 C. spaghetti sauce. Arrange lasagna noodles seam side down in sauce in making dish. Top with remaining sauce. Cover with tin foil. Bake at 375 for 30 min or until hot. Serve if desired with additional parmesan cheese.

avocado stuffed chicken salad


This is so easy and yummy!

1 C. shredded chicken (I used 3 tenderloins)
3 Tbsp mayo
green onions
1/4 C. black beans
1 Tbsp white vinegar
garlic salt to taste
1 Tbsp lemon juice
1/4 C. walnuts/pecans chopped up

Mix everything together then spoon into the avocados.

Quiche


I love a good quiche!! I finally bought a quiche/tart pan and wanted to try it out. I just used a simple dough recipe that i found online.
Then for the filling:
some chopped up chicken seasoned to your liking
zucchini
spinach
1/2 homemade bread crumbs
seasonings
fresh parmesean cheese
put all that in the pan then add:
2 eggs beaten, 2 Tbsp flour and 1 1/4 C milk mixed well. Just pour over evertthing

Bake at 350 for 45-60 min
so yummy!!!!
you can add any vegetable or meat you want

Chicken & Rice


Add 1 1/2 C RAW rice to a 13X9 casserole dish

Add about 1/2-1 C of shredded cheese on top of rice
Add chicken breasts ( I used 3 Huge ones and just cut in 2-3 pieces), 3 C. cold water, 1 can cream of chicken soup, 1 pkg onion soup mix (I didnt have any so I crushed 2 beef boullion cubes & some onion powder and it tasted the same) and whatever seasoning you want on chicken.

Bake at 350 for 1 hour

add 1/2-1 C. shredded cheese and bake for 30 more min (cover with foil)

And there you have it!! yummy dinner!!! my kids loved this!!

BBQ Chicken Salad


I Have a ton of lettuce in my fridge that really needs used up so I found this recipe from The sisters Cafe and it turned out YUMMY!!!!!

2 Large chicken breasts
1 C. bbq sauce
1 can black beans (I used dried that I had cooked & frozen previously)
1 can corn (I used frozen)
lettuce cut up
shredded cheese
1 bunch green onions
1/2 bunch cilantro
tortilla strips

Cook the chicken breasts in a bit of EVOO. When cooled shred. Return to pan add the bbq sauce. you can add more or less. I used Sweet baby rays. It has the best flavor. Let it cook with the sauce for 5-10 min. Cut up lettuce add onion and cilantro. Add the cooked beans and corn. Its best to let them cool if you just cook them.
Layer the lettuce mixture on plates then add chicken, cheese and top with your favorite dressing. THen add the tortilla strips.
To do the strips. cut a corn tortilla into skinny strips. On a baking sheet spray the tortillas with cooking spray and salt then broil in the oven until crispy. Watch it carefully!!!

Dutch Oven Potatoes, Carrots & Chicken


This was very yummy. My kids loved it!
There arent any real measurements just however much you want.

You will need
potatoes, peeled and diced up - 1 used about 5-6
1 onions chopped up
baby carrots- i used 3/4 of a 2 lb bag and i chopped them up
1 lb bacon
some chicken tenderloins cut up- i used about 10 i think
some shredded cheese
7-up/sprite - you can use a can i had a 2 liter and poured whatever i thought seemed good

Okay first get your dutch oven all heated up.
Fry the bacon in it, remove it and crumble or i used scissors and cut it up. and return to dutch oven. add your onion fry that for a bit. then add the potatoes, carrots and chicken. Pour the 7-up over and cook till done. I checked on it and stirred occasionally. When done top with cheese and heat until melted. Serve!
I found its really yummy to add some cajun seasoning or cayenne pepper. yummy!!

Turkey Pot Pie



I forgot to take the after pic so this is right before it went in the oven.

bear with me i didnt measure


i chopped up turkey (you could use chicken) about a cup
i used my own potatoes cooked and cubed i made too much i'd do about 1/2- 3/4 C
or if you dont want that you can use a can of potato soup
if you dont use the soup then you will need 1 can of cream of chicken soup
about 1/2 cup milk
1/2 c. corn
1/2 c carrots (really any veggies you want)
2 pie crusts (one for top and bottom)
i used a deep dish for bottom i liked that better cuz you can fit more in. then i use a reg on top. take the one for top out of the tin lay on wax paper until flat about 15-20 min then after you get everything in the bottom put on top and pinch closed cut slits and bake at 350 for abotu 20 min or until crust is brown.
COOK ALL VEGGIES FIRST!!!
season with whatever you want.

Sweet and Sour Chicken



Sweet and Sour Chicken

3 lbs chicken

Sprinkle each piece of chicken with garlic power and salt. Dip in 3 well beaten eggs then roll in a mixture of ¾ C flour and ¾ C corn meal. Brown in oil and lay flat in a baking dish. Cover with sauce and bake at 350 for 1 hour turning once.

Sauce:

2-3 cups chicken broth

1 Cup white sugar

½ C. Ketchup

2/3 C. white vinegar

2-3 Tbsp soy sauce

Serve sauce over rice.

Spicy Romano Chicken Pasta



This is really similar to Carino's dish. Super yummy


2 T. butter
2 boneless, skinless chicken breasts (cooked, thinly sliced)
1/2 C. sliced mushrooms
1/4 C. diced green onions
1/8 C. sliced sundried tomatoes
Alfredo sauce (made from recipe below or from a jar)
1/4 cup Grated Romano cheese
1 can artichoke hearts, drained and chopped
Cayenne pepper to taste
Bowtie pasta, cooked

In pan melt butter, sauteƩ chicken, mushrooms, green onions, and sundried tomatoes until hot.



Add Alfredo sauce and Romano cheese. Simmer.

Add cayenne pepper to taste. Serve over bowtie pasta. ENJOY!
Alfredo Sauce
1/2 C. butter
2 oz. cream cheese
2 C. heavy cream
3/4 tsp. garlic powder
Salt
Pepper
1/2 - 3/4 C. Parmesan cheese

In saucepan, melt butter. Add cream cheese, heavy cream, garlic, salt, and pepper. Whisk constantly and bring to a boil. Simmer for 20 minutes, stir every few minutes. Remove from heat and stir in Parmesan cheese. Cover and let it sit for 5 minutes.
