Symphony fudge




4 cups sugar
2 cups whipping cream
2 sticks butter (no margarine)
16 oz. chopped Symphony candy bars (I used the almond and toffee chip kind)

In a large saucepan, mix the sugar and whipping cream. Bring to a boil and boil for one minute. Add the two sticks of butter and continue cooking. Boil mixture until it reaches 230 degrees on a candy thermometer. Remove from heat and stir in chopped Symphony bars until melted and smooth. Beat mixture with an electric mixer for 2-3 minutes. Pour into a greased 13x9 pan. Allow to harden and cool. Remove block of fudge from pan and cut into squares. Can refrigerate if desired.

* I found that this needs to be refrigerated or it gets too soft. I had a hard time reading 230 degrees though I may cook a tad longer next time. But this is an amazing fudge recipe

Chocolate tools

So my boys will be 5 on Friday!!! I can't believe how fast the time has flown by. They are really into construction everything so we are doing a construction themed party. I found tool molds on amazon for way cheap and just used milk chocolate chips. I love how they turned out. They had hard hats too but they use tons of chocolate and are way too solid and too much chocolate. Anyways the boys love them.

homemade chocolate ice cream


First off I have to tell you this is the BEST chocolate Ice cream I have ever tasted. No more buying chocolate ice cream for me!!!

1 C. Milk
1/2 C. sugar
1 1/3 C. semi sweet choc chips (I used 1 1/2 C. milk choc chips sooo much better)
2 C. heavy cream
1 tsp vanilla

Heat milk on stove until it just begins to bubble. 
Meanwhile process chocolate in a food processor until it is finely chopped. 
Mix chocolate and sugar.
Combine hot milk and chocolate mixture and blend until chocolate is melted and mixture is smooth. (I left a few pieces that werent totally melted and it was great!)
COOL completely.
Once cool, stir in heavy cream and vanilla
Chill for at least 30 min 
Pour into ice cream maker.
Mix in ice cream maker 25-30 min or according to manufacturer's instructions.

mint brownies


Don't these make your mouth water??? sooooo yummy. I kinda played around with a few recipes.
anywho I've had some requests to post it so here it is:

2 C. Sugar
1 C. Butter
4 Eggs

cream until fluffy then add:

2 C. flour
1/2 C. cocoa
1 tsp salt
1 tsp baking powder
1 tsp vanilla
2 Tbsp milk

mix well then bake at 350 for 30-45 min in a 9x13 pan.
(I did do it in the 9x13 but i think next time i'll do a cookie sheet as i like them a little smaller)

Cool for about an hour. you can speed it up in the fridge. then frost with the mint icing.

Mint Icing:

3 Tbsp butter
2 Tbsp milk
1 1/2 C. powdered sugar ( i used closer to 3-4 C)
2-3 drops mint flavoring
green food coloring

Mix well. I added more sugar so it was thicker like a frosting instead of runny.

Drizzle with chocolate

Chocolate Drizzle:

3 Tbsp butter
1/2 C. choc chips ( I used milk)

Melt carefully in microwave. Do 30 sec intervals and stir after each until completely melted. Cool slightly. I just used a fork and kinda drizzled it all over the mint.

Then take some andes mints. I used about 15. I used my Kitchen Aid Food Chopper and chopped them up. THen i just took a handful and sprinkled it all over the brownies.
There you have it!!! BEWARE!!! these are very hard to resist!!!

Valentines Day

Did you  make anything fun???
here's what I made
I made my Strawberry Cupcakes and then I made a Lemonade Frosting.
To do the frosting its:
1 cube butter
8 oz cream cheese
1 tsp lemon grind
8-10 tsp frozen lemonade concentrate (thawed)
5 C. sugar (or until desired thickness)
Mix well.


 Strawberry fruit pizza
SO easy. I just had some sugar cookie dough and i pressed it into a heart shaped cake pan and baked at 350 until lightly browned. Then I made whipped cream and frosted then cut up strawberries.

Chocolate Drinks

Choco Punch

4 (1 oz) squares semi sweet chocolate

½ C. Sugar

2 C. hot water

2 quarts milk

1 ½ tsp vanilla

1 quart vanilla ice cream

1 quart club soda

½ pint heavy whipping cream whipped

ground cinnamon

In saucepan combine chocolate and sugar with hot water. Bring to a boil, stirring for 3 minutes. Add milk; continue heating. When hot, beat in vanilla. Remove from heat. Chill; then pour into punch bowl over ice cream. For sparkle add club soda. Top with whipped cream and cinnamon.

Choco- Cheesecake Freeze

4 oz cream cheese softened

2 Cups milk, divided

6 scoops chocolate ice cream

Place cream cheese and 1 cup milk in blender; blend until smooth. Place remaining milk and ice cream in blender and continue to blend until smooth. Serve cold.

Minty Chocolate Milk

2 Tbsp chocolate syrup

1/8 tsp peppermint extract

1 cup milk

1 scoop chocolate ice cream

Stir together chocolate syrup, peppermint extract flavoring and milk. Add ice cream. Serve immediately.
