Cheesy potatoes and Parmesan tilipia

These were awesome. First I sliced the potatoes. Not too thick. Then I cut them again so they were like shoestring ( my Boys said French fries) put in greased pan pour 1 1/2 c heavy cream. Salt and pepper and 2 c shredded cheese (any kind) bake covered with tin foil at 400* until tender about an hr. then broil about 6 min. Yummy!!! I made this with Tilipia. It was great

For thd tilipia. In a bowl add 1/4 c soft butter 3 tbsp mayo 2 tbsp lemon juice 1/4 c parmesan cheese a dash of onion pwd a dash of dried oregano. Mix well set aside. Broil tilipia about 3 min turn and do same to other side. Then turn again and brush with your Parmesan mixture then broil until gone about 3-4 min. Enjoy. I will be making this again!!!

Rolls


These ROlls are sooo yummy!! you can make any shape but i did crescent. I've never done them before and they turned out awesome. Everyone loved them. (Sorry I forgot to take a pic of the rolls DONE.)

2 packages (1/4 ounce each) Active Dry Yeast
1 cup warm water
1 cup boiling water
1 cup shortening or butter 3/4 cup sugar
1-1/2 teaspoonS salt
2 eggs, beaten
7-1/2 to 8 cups all purpose flour
DIRECTIONS:
 In a small bowl, dissolve yeast in warm water. Meanwhile, in a large mixing bowl, combine boiling water, shortening, sugar and salt. Allow to stand 3-4 minutes or until shortening is melted and sugar is dissolved. Add the yeast mixture and eggs; mix well. 

Add 2 cups of four; beat until smooth. Add enough remaining flour to form a soft dough. Place in a greased bowl, turning once to grease the top. Cover and refrigerate overnight. When ready to use, roll out and shape dough. Place rolls in pans, or greased cookie sheets. Cover and let rise in a warm place until doubled, about 30 minutes. Bake at 350 degrees for 20-25 minutes or until they are golden brown. YIELD: 2 -1/2 dozen.

When I make these rolls, I often do it in one day. I skip the refrigerating overnight. Simply add enough extra flour, to make a SOFT.....non-sticky dough. They still are fabulous. Make sure you let the dough raise until generously double. Then place shaped rolls (I make crescent style)....on your greased cookie sheets. Let raise again until double, before baking.

Cheese Ball


Mix together 8 oz softened cream cheese
1/2 C. prepared double strength ranch dressing


Add 8 oz shredded cheddar cheese (at room temp)

Cover and freeze for One hour
 Shape into balls and roll into toasted almonds, walnuts or pecans chopped

Baked French Toast

This was soo yummy. my kids loved it!!

First take a loaf of sour dough bread. You can either tear it up or  dice it with a knife and throw in a 13x9 greased pan like so


In a bowl mix together 8 eggs, 2 Cups milk, 1/2 heavy cream, 3/4 C. sugar and 2 Tbsp vanilla. Mix well and pour evenly over the bread. Your SUPPOSED to cover and refrigerated a few hours or overnight. However, I didnt realize that step and skipped it (It still turned out great!!)


Before baking mix together:
1/2 C. flour, 1/2 C. brown sugar, 1 tsp cinnamon, 1/4 tsp salt. Add nutmeg if desired. add 1 stick cold butter cut into pieces and mix until it resembled fine pebbles. Sprinkle on top. And bake at 350 for 60 min or until firm. Top with maple syrup. YUMMY!!

Pumpkin dump cake

This is so easy and yummy!!!

15 oz pumpkin
10 oz evaporated milk
1 c light br sugar
3 eggs
3 tsp pumpkin spice

Mix together put in greased 13x9 baking dish top with boxed yellow cake mix ( just the flour mixture don't add the other stuff). And 1 c chopped nuts and about 1/4 c toffee pieces then put two cubes melted butter on top and bake at 350* for 45 min or until lightly browned and center is set. Top with homemade whipped cream.

Corn Dogs

my kids love corn dogs and are always wanting me to make them. so when i found this recipe from the Nate Berkus show I knew I had to try it!

1c Corn meal
1c all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1c buttermilk
1/4c honey
1 egg (beaten)
2lbs. your favorite hot dogs, turkeydogs, soydogs, or sausages
1/2c flour for dusting
3 qts peanut or vegetable oil for frying
wooden skewers
2c Shredded Cheddar cheese (optional)
Heat oil in fryer to 365 degrees.
In a medium mixing bowl combine all dry ingredients, except flour for dusting, with a whisk. In a 1 quart container combine buttermilk, honey, and egg. Transfer batter to a plate for easier dipping.
On a plate spread out flour. If using cheese, make a slit in the hot dog 2/3 of the way down, leaving a hinge and pack in 1-2 T of shredded cheese. press to seal the dog. Dry hot dogs and roll in flour. tap to remove excess flour making sure a light coating remains.
Insert skewer 1/3 into bottom of the hot dog and dip in batter glass, coating the hot dog completely with an even coating. Carefully drop into fryer and fry until a deep golden brown color is achieved. Turn the corn dog during cooking using tongs to brown both sides.
Remove to paper towels to absorb excess oil. Hold on a rack over a sheet pan in a 200 degree oven if you want to serve many at once. Eat 'em up!

Creme Broulee

I have to say this is my favorite dessert!! I had never had it before until a few weeks ago when I was in Cyprus I tried it and it was heaven. So when I ran across The Pioneer Woman's Recipe I knew I HAD to try it. Boy am I glad I did!!

4 C. Heavy Cream
1 Tbps vanilla extract (i used 2 as i love the flavor)
10 egg yolks
3/4 C. sugar
6 Tbsp super fine sugar

Preheat oven to 325. Pour the cream into a saucepan and vanilla. simmer over med-low heat. you do not want to boil it just to heat it up.
whip the eggs with the sugar until its pale yellow and thick.
whip egg yolks while you very slowly add 1 C. of the heated cream. go very slowly as to NOT cook the eggs. Once the first cup is mixed in you can add them a bit faster.
place ramekins into a rimmed baking sheet. pour the custard into the ramekins. pour water in bottom of baking sheet until it comes about halfway up the ramekins. bake 30 min or until just set. ( i cooked mine closer to 60 min. so just watch them.)
Cool then chill for at least 2-3 hours in fridge.  To serve sprinkle 1 Tbsp super fine sugar (you can use regular sugar as well)  Use a kitchen torch to brown the sugar. there should be a thin crisp surface of burned sugar on top. serve immediately!

So i found this on Pinterest and my boys love mator and asked me to make them for their birthday. I decided i was going to do a trial to see if they were even doable....needless to say. i'm not making them for their party. making 6 was a PAIN!!! but they loved them

Baked Creamy Chicken Taquitos



1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic, or garlic powder
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken
1 C grated pepperjack cheese
small corn tortillas (and actually, flour ones are really good as well)kosher salt
cooking spray

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.
Heat cream cheese in the microwave for about 20-30 seconds so it’s soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.
You can prepare up to this step ahead of time. Just keep the mixture in the fridge.
Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or are coming unrolled right away, just try heating them longer and try the paper towel thing.
Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.
Then roll it up as tight as you can.
Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray or an oil mister and sprinkle some kosher salt on top.
Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.

These are really yummy dunked into Cilantro Lime Ranch Dressing.

For the dressing:
1pk dry ranch dressing mix
1 C. mayo
1/2 C. milk
1 lime
2 garlic cloves minced
1/2 C. chopped cilantro
4 anaheim peppers
throw everything into a blender and mix well.

Chicken and Cheese Lasagna Roll ups

anywho here is the recipe. These were really yummy!

3 C. chopped cooked chicken
1 C. cottage cheese
1/4 C. feta cheese (i used goat cheese)
1/4 grated parmesan cheese
1/4 C. milk
1/8 tsp pepper
10 lasagna noodles
2 C. spaghetti sauce

In a medium bowl combine the chicken, cheeses, milk and pepper. Spread 1/2 mixture on each noodle; roll jelly roll fashion. In a 913 pan spread 1 C. spaghetti sauce. Arrange lasagna noodles seam side down in sauce in making dish. Top with remaining sauce. Cover with tin foil. Bake at 375 for 30 min or until hot. Serve if desired with additional parmesan cheese.

Penne alla Vokda


I saw this off of the Pioneer Womans Tv show on the Food Network and knew I had to try it. I've heard this is the best pasta. And I've also seen it off of Buddy's Kitchen Boss too. So I finally decided to do it. Had my husband pick me up a bottle of vodka and some cream and we were set!

Penne Alla Vodka

1 lb penne (you can use any pasta really)
3 cloves of garlic minced
1 whole med onion chopped finely
3 Tbsp butter
2 Tbsp olive oil
1 C. Vodka
14 oz tomato puree or tomato sauce (if using sauce you will need a small can of tomato paste as well)
1 C. heavy cream
1 generous pinch red pepper flakes, plus more if needed
1/2 tsp salt
freshly ground pepper
grated fresh parmesan cheese for serving on top

Cook the pasta according to package directions.

Saute the garlic and onions in 2 Tbsp butter and the olive oil in a saucepan over medium heat until soft. Pour in the vodka. Cook and reduce 2-3 minutes then pour in the tomato puree. Stir the mixture until its throughly combined then reduce to low heat. Pour in heavy cream. Stir to combine, then turn to the lowest simmer possible. Sprinkle in the red pepper flakes and salt and pepper to taste. Finally stir in the remaining 1 Tbsp butter. Pour in the drained pasta into the sauce and toss to combine. Sprinkle on the parmesan and more red pepper flakes if desired.

*I used tomato sauce and it was really RUNNY!!! SO I poured about 1/2 C. out and added 1 small can of tomato paste and then added about 1/4 C. more vodka and it turned out PERFECT! so yummy!!*

Texas Roadhouse Rolls


I made these today and OMG SOOO YUMMY!!!
They tasted just like Texas Roadhouses and I even made a cinnamon honey butter which was so yummy too. My kids loved it.

Texas Roadhouse Rolls

4 tsp active dry yeast
1/2 C. warm water
2 C. scalded milk, cooled to luke warm
3 Tbsp butter melted, slightly cooled
1/2 C. sugar
7-8 C. flour
2 whole eggs
2 tsp salt

Dissolve yeast in warm water with a teaspoon of sugar. Add yeast, milk, sugar and enough flour to make a medium batter. Beat well. Let stand until light and foamy. Add melted butter, eggs and salt. Beat well.

Add enough flour to form a soft dough. Sprinkle a small amount of flour onto counter and let dough rest. Meanwhile grease a large bowl. Knead the dough until satiny and put in a greased bowl. Turn over to grease top. I used the dough hook on my kitchen aid mixer to knead. Cover and let rise in a warm place until double in size. Punch down. Turn out onto a floured board. Cut in half. Let rest 10 min. Roll out each into 1/2" thick rectangle then fold the rectangle in half making it about 1-inch thick. I used my rolling pin and rolled over the dough very gently just to seal the two halves together. Then I used a sharp knife and cut the rolls into squares and placed them on a greased cookie sheet.
Bake at 350 for 14-17 minutes or until golden brown. Immediately baste with melted butter.


Cinnamon Honey Butter

2 sticks of room temperature butter
1/2 C. powdered sugar
1 C. honey
2 tsp cinnamon

Mix well and spread on the rolls. YUMMY!

i remade the jello cups


These are so fun and so easy. They are a little time consuming though.
So you pick out some colors of jello you want and get some clear cups. I used plastic ones so we could just toss them later.
Use the small packages of jello
For these I made 7
you make one at a time. Make it with 1 C. boiling water then add enough ice to cool which is about 7 pieces then stir until cool then remove the leftover ice. Pour about 1/2 or a little more in the cups then reserve the rest. Put the cups in the fridge to set up about 30 min. While they are setting up add some cool whip (or homemade which i did which taste SO much better) or plain yogurt. I used about 1/4- 1/3 C. mix well. I used a wisk. THen when the first layer is set up add this layer. THis layer will be a little thick so just mix it a little and SPOON it in. THe key is to make sure the layer is pretty set and SPOON it on. Then let completely set in the fridge at least an hour before serving.

Lasagna Cups


These were yummy and so easy.

I made 15 cups

30 wonton wrappers
1 lb hamburger/turkey
1 onion
16 oz tomatoes or sauce or a mixutre of both
mozzarella cheese
ricotta cheese (or and use cottage cheese thats what i use)

Mix salt and pepper and some fresh/dried basil and parsley with the ricotta cheese.
Cook the hamburger with onions until done. Then add the tomatoes/sauce and cook about 10 min. Turn off and let sit.

Spray your muffin tins. Then put a wonton wrapper in each. Push it down. Then add a spoonful of the ricotta mixture to each tin. Then add the hamburger mixture 1 Tbsp shredded mozzarella cheese. Put another wonton wrapper on top. and add another spoonful of ricotta mixture, meat mixture and top with 1 Tbsp mozzarella cheese. Bake at 375 for 10-15 min or until cheese is melted.

Crispy Potato Roast


Have you guys checked out Pinterest? If not you definitely should. I've found tons of new recipes including this one from there.

here's the recipe:

3 Tbsp melted butter
3 Tbsp olive oil
4 lbs potatoes
4 shallots
1/2 onion
1/2-1 tsp red pepper flakes (optional)
8 sprigs thyme

Preheat oven to 375. In a bowl combine the butter and olive oil. Brush all over your dish your using. SLice potatoes very thinly and evenly. (I used my Kitchen-aid food processor it has a slicing attachment that makes it so much easier). Arrange the sliced potatoes vertically in the dish. Wedge shallots and onions between the poatoes. (I also added some fresh bacon chopped up YUMMY). Salt and pepper to taste. Bake 1 1/4 hr. Add thyme and bake 30-40 more min or until potatoes are cooked through with a crispy top.

zebra cake


We had another birthday so I made this for my husbands birthday. IT was yummy!!

Take 2 cake mixes. One chocolate (i used milk chocolate) and one white.
Follow directions per box as to what to mix. Then get 2  9" round pans. I used a cheesecake spring form pan. ( Its so much easier to get it out with the removable sides...i'm going to nee more of those!)
Start with the white and pour 1/3 C. into the pan. It was start to spread which is what you want. Then add 1/3 C. of the chocolate. Continue to layer until the pan(s) are about 1/2-3/4 full. YOu dont want to over fill them though so less is always better. If you use two pans you shouldnt have any leftover.
However since I used one springform pan I had some left over to make about 6 cupcakes with.
When cool frost with your favorite icing. I used a Cream cheese butter cream;

1/2 C. butter
8 oz cream cheese
Mix together until fluffy. THen add powedered sugar until desired thickness. Add some whipping cream  if it gets too thick.
I like using the whipping cream as then the frosting isnt too sugary and it help whip it and hold better.

pink zebra print cake



I made this for my moms birthday. It was way easy and it looked so fun!
One batch of white cake batter
2 Tablespoons Unsweetened Cocoa Powder
Black food coloring gel
Pink food coloring gel

Directions
1.  Divide your batter into 3 separate bowls.  Leave one uncolored.  In the second bowl mix in cocoa powder and black food coloring gel (enough gel to get it the color you want… I added 1/4 teaspoon of the Wilton Fondant coloring paste/gel).  In the third bowl mix in pink food coloring gel until it is the color you want (you will not need as much as you used for the black).
2.  Grease and line the bottom of your pan (I used an 8 inch pan) with parchment paper.  I wouldn't skip this step because if the cake tears apart coming out of the pan, the effect is pretty much ruined.  Start off by adding roughly two tablespoons of your white batter to the very center of your pan.  Wait a few seconds for the batter to spread out.  In the center of your white batter, add two tablespoons of your black batter and wait for it to spread out.  Then add two tablespoons of your pink batter.  Your pan should look something like this:
3.  You will repeat this process until the pan is as full as you want it to be.  Don't make it too full because you do not want a overlarge dome to cook up.  And yes, this will take awhile… but it's not boring.  This is how the pan should gradually transform:
4.  Bake your cake as evenly as possible.  It helps to rotate the pan after 10 minutes of cooking.  Bake your batter according to your recipe's instructions.  Wait a few minutes after pulling it out of the oven, then turn it out but do not let it cool upside down.  Once it's cool, you can remove the parchment paper and decorate or top however you like.

Fried goat cheese

We love goat cheese so when I found this recipe I was so excited.

16 oz goat cheese (I used a garlic herb one)
1 c. Panko bread crumbs (found in oriental section of grocery store )
2 tsp dried parsley
1 tsp dried thyme
1/2 tsp garlic powder
salt & pepper
2 beaten eggs
1/2 c flour
olive oil

Freeze cheese about 15 min then slide.  It fall apart just smash together with hands into a Patty. Mix bread crumbs with parsley, thyme, garlic,salt & pepper. Dip cheese in flour them eggs then the breead crumbs.  Pour olive oil in pan. Just enough to coat pan. Fry on both sides til lightly brown and crisp.

avocado stuffed chicken salad


This is so easy and yummy!

1 C. shredded chicken (I used 3 tenderloins)
3 Tbsp mayo
green onions
1/4 C. black beans
1 Tbsp white vinegar
garlic salt to taste
1 Tbsp lemon juice
1/4 C. walnuts/pecans chopped up

Mix everything together then spoon into the avocados.

Homemade Krispy Kreme Doughnuts


Donuts:
2 T. Yeast
1/4 c. warm water
1 1/2 c. lukewarm milk
1/2 c. sugar
1 t. salt
2 eggs
1/3 c. shortening
5 c. flour

Pour yeast into warm water and let stand for 5 minutes or until bubbly. In a large bowl mix together yeast mixture, milk, sugar, salt, eggs , shortening and 2 cups of the flour. Mix for 2 minutes on low speed or with a wooden spoon. Beat in remaining flour 1/2 cup at a time until dough is no longer sticky. Knead for 5 minutes or so until dough is smooth. Put dough into a greased bowl and cover. Let rise until double. Turn dough onto a floured surface and roll out into about 1/2" thickness. Cut out with a donut cutter or a large glass and small round cookie cutter for the center. Cover donuts lightly with a thin towel and let rise again until double.

Glaze: (I triple this esp if you cook the doughnut holes)
1/3 c. butter
2 c. powdered sugar
2 t. vanilla
4 T hot water

In the mean time melt butter in a saucepan over medium heat. Stir in powdered sugar and vanilla until smooth. Remove from heat and stir water in a little bit at a time until icing has thinned out some. Set aside.

Frying:
Heat oil to 350*. Slide donuts into the hot oil using tongs. Turn donuts over as they brown. Cook on each side until golden brown. Remove to wire rack or paper towels to drain. While still hot, dip donuts into glaze and set onto wire racks to drain. (I put the wire racks onto a cookie sheet so that I can reuse the glaze that drips off.

Variation:
Melt some chocolate chips into the glaze for chocolate glazed donuts.

Homemade Tostadas


We loved these! The kids too. And they are super easy to make.
Get some corn tortillas (you could use flour if you want too). Put a baking pan in the oven and preheat to 450. After the oven in preheated oil the pan. NOT TOO MUCH just to coat it. Then i sprayed some pam on top of the tortillas so they wouldnt dry out and baked. You need to turn them over a few times to make sure it gets crispy. I got impatient and turned the broiler on and turned them over a few times. It did it fast, but you have to watch them closely.

For the toppings I got some refried beans and warmed them up and put a layer on the torillas
Then the sour cream I added a few Tablespoons of taco seasoning (to taste) to it and mixed then put that on the next layer
then i made some guacamole (you could buy some) and put that on next
then comes the shredded cheese. any kind you prefer
then olives, tomatoes, green onions and jalapenos!
Super easy and fast. I think I had dinner ready in 15 minutes! The longest part is cooking the tortillas

homemade chocolate ice cream


First off I have to tell you this is the BEST chocolate Ice cream I have ever tasted. No more buying chocolate ice cream for me!!!

1 C. Milk
1/2 C. sugar
1 1/3 C. semi sweet choc chips (I used 1 1/2 C. milk choc chips sooo much better)
2 C. heavy cream
1 tsp vanilla

Heat milk on stove until it just begins to bubble. 
Meanwhile process chocolate in a food processor until it is finely chopped. 
Mix chocolate and sugar.
Combine hot milk and chocolate mixture and blend until chocolate is melted and mixture is smooth. (I left a few pieces that werent totally melted and it was great!)
COOL completely.
Once cool, stir in heavy cream and vanilla
Chill for at least 30 min 
Pour into ice cream maker.
Mix in ice cream maker 25-30 min or according to manufacturer's instructions.

Homemade peach ice cream

I didnt get a picture of this ice cream. but its SOO yummy especially if you like peaches.

3 C. mashed peaches
1 Tbsp lemon juice
4 C. milk
3 C. whipping cream
1 1/2 C. sugar
1 tsp vanilla
1/4 tsp almond extract
1/4 tsp salt

If using fresh peaches cook a bit (until skin comes off easily) and sweeten to taste. I added a bit of sugar then processed in my kitchen-aid food processor.  Add lemon juice to peaches. Combine Milk, whipping cream, sugar, vanilla, almond and salt. Add peaches to milk mixture. Chill about an hour. Put in ice cream maker and follow the directions on it. Makes about 1 gallon.
You can substitute any fruit for the peaches.

we LOVED THIS!!!! soo yummy.

Jello Cups

Breakfast cups

Take a bag of thawed hashbrowns mix in salt and pepper to taste, 1Tbsp oil and 1/3 c shredded cheese. Put in well greased muffin tin. Spread out good and smash to bottom well. Bake at 425° for 15 min. Reduce heat to 350° crack Med egg into each and top with Bacon bits ans cheese (I used Bacon that I chopped ) bake 13-16 min or until eggs are done.
