No Fail Pie Crust

3 C. flour

¾ tsp salt

1 C. shortening

1 egg

6-9 Tbsp cold water

1 tsp white vinegar

Mix flour and salt, cut in shortening to cornmeal texture. In a separate bowl mix egg, water and vinegar. Add to dry ingredients and mix well. Divide dough and roll out on lightly floured dough disc.

*Crust is also great for tarts, cobblers and fried pies*

*Make three 9” pie crusts *

Buns

Burger or Hot Dog buns

1 Cup Milk

1/2 C Water

1/4 C. Butter

4 1/2 C. Flour

1 pkg yeast

1 egg

2 Tbsp sugar

1 1/2 tsp salt

***`~-You can skip steps 1- and 2 and put in the bread machine on a dough cycle.

1. In a small saucepan heat milk, water and butter until very warm, 120 degrees.

2. In a large bowl mix together 1 3/4 Cups flour, yeast, sugar and salt. Mix milk mixture into flour mixture and then mix in egg. Stir in the remaining flour 1/2 cup at a time beating well after each addition. When the dough has pulled together turn it out onto a lightly floured surface and knead until smooth and elastic about 8 minutes.

3. Divide dough into 12 equal pieces. Shape into smooth balls, and place on greased baking sheet. Flatten slightly. Cover and let rise for 30 to 35 minutes. You can let rise longer if you want.

4. Bake at 400 for 10 to 12 minutes or until golden brown.

5. For hot dog buns: shape each piece into a 6X4 inch rectangle. Starting with the longer side, roll up tightly and pinch edges and ends to seal. Let rise about 20- to 25 minutes. Bake as above. These buns are pretty big. You can do 16 instead of 12.

Whole Wheat Pasta Dough

Whole-Wheat Pasta Dough

Use 2 cups of whole-wheat flour.

Break 2 eggs into the well.

Add 2-3 tablespoons water, 1 tablespoon olive oil, and 1 teaspoon salt.

Beat mixture in the well with a fork and then work in the flour.

Pizza Dough

Pizza Dough

1 C. warm water

1 pkg yeast

1 tsp sugar

1 tsp salt

2 Tbsp oil/olive oil

Add water and yeast stir until dissolved. Add 2 C. flour and beat until smooth. Then at 1 ½ C. flour or less. Turn out on floured board and knead until smooth and elastic. Place in greased bowl and let rise 45 min. Top with your choice of pizza toppings.

2 cups of whole wheat flour

1 pkg. or 1 tbsp. of active dry yeast

3/4 tsp. salt

1 cup of warm water

1 tbsp. olive oil

1 tsp. honey

Add water and yeast stir until dissolves. Add olive oil, salt and honey. Add flour knead until smooth. Place in greased bowl, let rise.
