zucchini relish

I have to say when I first heard of this I was unsure but my friend, Melissa brought me a jar last year and I LOVED IT!!! and i HATE relish. it was so yummy especially on hamburgers



This is all the veggies (zucchini, red pepper, green peppers and the onions shredded)
I used my kitchen aid shredded on all but the peppers and onions it wasnt working on those with the tough skin so i put then in my food processor.

you use 10 zucchini (i didnt use that many cuz a lot of mine were pretty big)
4 onions
1 red pepper
3 greed peppers
3/4 C. canning salt (i didnt use this and it was fine)
your suppose to let all the shredded veggies (juice and all) set  8-24 hours. i let mine sit an hour
Rinse and squeeze dry by the handfuls then add:
2 1/2 C vinegar
6 c. sugar (you can lessen if you want)
2 tsp mustard SEED
2 tsp turmeric

boil GENTLY for 30 minutes then pour into jars



you can either waterbath for 10 min or i used a pressure cooker 5lb for 5min

i got 11 pints :)
i also did some whole tomatoes as well




Zucchini Relish
10 grated zucchini
4 grated onions
3 large grated green peppers
1 large grated red pepper
3/4 cup canning salt
Stir well. Cover and let stand overnight or for at least 8 hours. Rinse well in cold water to remove salt. Then, one handful at a time, squeeze to remove water.
Mix together:
2 1/2 cup vinegar
6 cups sugar
2 tsp mustard seed
2 tsp turmeric
Add zucchini, then boil gently for 30 minutes. Pour into jars. Water bath for 10 minutes.

*great on burgers!*

canning

so i've recently taken up canning. not that i really know what i'm doing. but i did tomato sauce ALL BY MYSELF. my mom even let me use her pressure cooker (she usually doesnt. seems to think i'll blow up the house)

strawberry danish dessert




This is super easy!!

2 graham cracker sleeves
1 stick of butter

put crackers in blender/food processer and process until fine crumbs. put in 9x13 pan add the melted butter and use a fork to moisten all crumbs. then press down in pan and bake at 350 for 10-15 min.

3 pkg strawberry danish junket
1/2 lb strawberries cut up

follow directions on box. make sure to boil at LEAST ONE MINUTE. Then fold in strawberries pour in pan and set in fridge to set.

Top with homemade whip cream. so yummy.

whip cream:
whipping cream
sugar to taste

if you have kitchen aid use whisk put on high and let it go. it will be done in like 30 sec. 
if not you can put in the magic bullet or even a hand blender. when it peaks its done.

Muffins That Taste Like Donuts


Okay wow. its been a while since i've posted huh?
I got this from the pioneer woman. i love her she has awesome recipes. i do have to say i ommited the oil and used applesauce instead (and i HATE applesauce...you cant taste it at all but it lowers the calories by a TON and i've been trying to lose weight so its all about the calories) and they were AWESOME!!!! kids loved them too


Muffins That Taste Like Donuts
Ingredients
1-¾ cup Flour
1-½ teaspoon Baking Powder
½ teaspoons Salt
½ teaspoons Nutmeg
½ teaspoons Cinnamon
cups Oil
¾ cups White Sugar
1 whole Egg
¾ cups Milk
_____
FOR THE TOPPING:
¼ cups Butter
cups White Sugar
1 Tablespoon Cinnamon
Preparation Instructions
Combine flour, baking powder, salt, nutmeg and cinnamon.
Combine oil, sugar, egg and milk. Add dry ingredients and stir only to combine.
Bake at 350 degrees for 15-20 minutes. Meanwhile, melt the butter in a bowl. Combine the white sugar with the cinnamon in another bowl.
Shake muffins out while still hot. Dip muffins in butter, then into the sugar/cinnamon mix. Let cool.

Black bean and sweet corn quinoa salad


Heat 1 Tbsp olive oil in pan
add 1 medium yellow chopped onion saute about 4 min then add
2 garlic cloves cook another min or two careful not to burn the garlic



add 3/4 C quinoa

add 1 1/2 C broth
1 tsp cumin
1/4 tsp cayenne pepper
1/2 tsp salt
1/2 tsp pepper
bring to a boil

cover and simmer 20 min or til water is absorbed.


should look like this. i like to stir to make sure it doenst stick.

after water is absorbed it should look like this.

add 1 C. frozen corn
2 cans (15 oz each) black beans rinsed and drained
cover and let sit off burner about 5 min.

add 1/2 C. chopped cilantro  serve warm or chilled.
i added lemon juice to mine and it was yummy

Banana Poppyseed Muffins


Heat oven to 400
mash 2 ripe bananas (i like to use my kitchenaid mixer rather than a fork)


They should look like this after they are mashed

add to the banana mixture:
1 egg
1/2 C sugar
1/4 C vegetable oil ( i use apple sauce instead for lower fat)
1/2 C. Milk
2 tsp poppy seeds
Mix

add 1 1/2 C flour (i mix whole wheat and white flour)
2 tsp baking power
1/2 tsp salt
1/4 tsp baking soda
mix well

Should look like this.
I added about 1/4 c lemon juice at this point to make them lemony

Fill muffin tins about 1/2 some of mine were a bit more and it was okay
I got exactly 24 muffins

Bake at 400 for 20 min and they look like this

Cake balls

These are super yummy. This was my very first time making these so bare with me lol

Okay first bake a cake. any kind. I made a yellow cake and added pink food coloring (per my daughters request) after its baked throw it in a pan like so



Mix it until its all crumbs


add a can of frosting I used cream cheese frosting but any kind works. I think its the 16 oz can.

Mix until its all mixed together like so.
I used homemade frosting (and cake) but I think I used too much frosting..whoops

Roll into balls and put on wax paper on cookie sheets
(i'll admit mine looked like blobs on the cookie sheet cuz with the frosting they wouldn't roll but after in the freezer for 3 hours i was able to roll like this)

Roll in melted chocolate. any kind. I used milk chocolate chips
I keep mine in the freezer yummy...
