Broccoli/Cauliflower Salad

This salad is always a HUGE hit.

what you'll need:

cut up broccoli
1 head cauliflower
1/2 bag baby carrots cut up
8 pieces fresh bacon cooked and crumbled
2 C. mayo - dont sub for miracle whip!
2/3 C. sugar
2/3 C. parmesan cheese
honey mustard & onion pretzel pieces (you can use any. i've never found these i usually use parmesan and garlic)

Mix everything together except pretzel pieces. Mix in pretzel pieces right before serving.

mint brownies


Don't these make your mouth water??? sooooo yummy. I kinda played around with a few recipes.
anywho I've had some requests to post it so here it is:

2 C. Sugar
1 C. Butter
4 Eggs

cream until fluffy then add:

2 C. flour
1/2 C. cocoa
1 tsp salt
1 tsp baking powder
1 tsp vanilla
2 Tbsp milk

mix well then bake at 350 for 30-45 min in a 9x13 pan.
(I did do it in the 9x13 but i think next time i'll do a cookie sheet as i like them a little smaller)

Cool for about an hour. you can speed it up in the fridge. then frost with the mint icing.

Mint Icing:

3 Tbsp butter
2 Tbsp milk
1 1/2 C. powdered sugar ( i used closer to 3-4 C)
2-3 drops mint flavoring
green food coloring

Mix well. I added more sugar so it was thicker like a frosting instead of runny.

Drizzle with chocolate

Chocolate Drizzle:

3 Tbsp butter
1/2 C. choc chips ( I used milk)

Melt carefully in microwave. Do 30 sec intervals and stir after each until completely melted. Cool slightly. I just used a fork and kinda drizzled it all over the mint.

Then take some andes mints. I used about 15. I used my Kitchen Aid Food Chopper and chopped them up. THen i just took a handful and sprinkled it all over the brownies.
There you have it!!! BEWARE!!! these are very hard to resist!!!

Quiche


I love a good quiche!! I finally bought a quiche/tart pan and wanted to try it out. I just used a simple dough recipe that i found online.
Then for the filling:
some chopped up chicken seasoned to your liking
zucchini
spinach
1/2 homemade bread crumbs
seasonings
fresh parmesean cheese
put all that in the pan then add:
2 eggs beaten, 2 Tbsp flour and 1 1/4 C milk mixed well. Just pour over evertthing

Bake at 350 for 45-60 min
so yummy!!!!
you can add any vegetable or meat you want

Aebleskiever


Have you ever tried an Aebleskiever? They are soo yummy!!
First you need the pan. I got this one HERE
Then you can use ANY pancake mix you just omit the egg in it and use 3 egg white beaten stiff.
These ones I used a corn cake mix (from prepared pantry but you could make your own which I will be doing since the kids scarf these down)
and I added some chopped up bacon and some shredded cheese in the middle.
we also used pork sausage and they were just as good!!

Cheerio Bars


Add 1/2 Cube of butter and 1 bag mini marshamallows to bowl


Microwave until looks like this about 2 min


Add 1/2 C. creamy peanut butter and mix well


Add 7 C Cheerios
1 C. m&m's

Press into 9x13 greased pan 
(it works easier if you have a plastic baggie on your hand that is sprayed)
press down evenly

Let cool. I put in fridge about 1 hour and slice up and enjoy!!!

Lime Cupcakes


Lime Cupcakes

1 C. all purpose flour
3/4 C. self rising flour
1 stick butter, softened
1 1/4 C. sugar
2 large eggs
juice from 3 limes
finely grated lime peel from 3 limes
green food coloring
3/4 C. buttermilk

Preheat oven to 350. Line muffin pans with liners. Mix both flours together in small bowl. Beat butter in large bowl until smooth. Add sugar and beat to blend. Beat in eggs then the next 3 ingredients. Beat in flour mixture with buttermilk alternately. Spoon batter into lines. Bake until done about 20-25 minutes. Cool then frost.



Frosting:

8oz cream cheese room temp
1 1/2 c. powdered sugar
1 stick softened butter
2 tsp lime peel grated
juice from 1-2 limes

 mix well. Add more sugar and lime juice to taste. I piped my frosting so I think I used around 4 C. sugar. I kept adding more lime juice until it was to my liking. These turned out so yummy!!!

St Patricks Day!!

My kids LOVE a green dinner on St. Patty's Day So this is what we did.

Green deviled eggs- THe kids loved this


Here's the boys plate:
Egg, roll, green jello, carrots, corned beef and a broccoli/cauliflower salad (I colored the mayo green for it too)

The kids insisted on green milk and that I had to have some too
