Chicken pillows

I was a bit skeptical on these but decided to try them. My 10 year old said they were the best and asked if she could have some for breakfast.

3 c cooked shredded chicken
8 oz cream cheese
1/4 c butter
Crescents ( I used two packs)
1 sleeve ritz (or any crackers) crumbs
1 egg

Mix chicken with butter and cream cheese then put in the crescents and seal well. Put egg in a bowl with a few Tbsp water and mix. Put cracker crumbs in another bowl. Dip each pillow into egg then crumbs and lay on cookie sheet. Do that to all then bake at 400 for 20 min. Serve with cream of chicken soup warmed with as much milk as you want for the thickness.

Cheesy potatoes and Parmesan tilipia

These were awesome. First I sliced the potatoes. Not too thick. Then I cut them again so they were like shoestring ( my Boys said French fries) put in greased pan pour 1 1/2 c heavy cream. Salt and pepper and 2 c shredded cheese (any kind) bake covered with tin foil at 400* until tender about an hr. then broil about 6 min. Yummy!!! I made this with Tilipia. It was great

For thd tilipia. In a bowl add 1/4 c soft butter 3 tbsp mayo 2 tbsp lemon juice 1/4 c parmesan cheese a dash of onion pwd a dash of dried oregano. Mix well set aside. Broil tilipia about 3 min turn and do same to other side. Then turn again and brush with your Parmesan mixture then broil until gone about 3-4 min. Enjoy. I will be making this again!!!

Baked Creamy Chicken Taquitos



1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic, or garlic powder
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken
1 C grated pepperjack cheese
small corn tortillas (and actually, flour ones are really good as well)kosher salt
cooking spray

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.
Heat cream cheese in the microwave for about 20-30 seconds so it’s soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.
You can prepare up to this step ahead of time. Just keep the mixture in the fridge.
Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or are coming unrolled right away, just try heating them longer and try the paper towel thing.
Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.
Then roll it up as tight as you can.
Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray or an oil mister and sprinkle some kosher salt on top.
Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.

These are really yummy dunked into Cilantro Lime Ranch Dressing.

For the dressing:
1pk dry ranch dressing mix
1 C. mayo
1/2 C. milk
1 lime
2 garlic cloves minced
1/2 C. chopped cilantro
4 anaheim peppers
throw everything into a blender and mix well.

Chicken and Cheese Lasagna Roll ups

anywho here is the recipe. These were really yummy!

3 C. chopped cooked chicken
1 C. cottage cheese
1/4 C. feta cheese (i used goat cheese)
1/4 grated parmesan cheese
1/4 C. milk
1/8 tsp pepper
10 lasagna noodles
2 C. spaghetti sauce

In a medium bowl combine the chicken, cheeses, milk and pepper. Spread 1/2 mixture on each noodle; roll jelly roll fashion. In a 913 pan spread 1 C. spaghetti sauce. Arrange lasagna noodles seam side down in sauce in making dish. Top with remaining sauce. Cover with tin foil. Bake at 375 for 30 min or until hot. Serve if desired with additional parmesan cheese.

Penne alla Vokda


I saw this off of the Pioneer Womans Tv show on the Food Network and knew I had to try it. I've heard this is the best pasta. And I've also seen it off of Buddy's Kitchen Boss too. So I finally decided to do it. Had my husband pick me up a bottle of vodka and some cream and we were set!

Penne Alla Vodka

1 lb penne (you can use any pasta really)
3 cloves of garlic minced
1 whole med onion chopped finely
3 Tbsp butter
2 Tbsp olive oil
1 C. Vodka
14 oz tomato puree or tomato sauce (if using sauce you will need a small can of tomato paste as well)
1 C. heavy cream
1 generous pinch red pepper flakes, plus more if needed
1/2 tsp salt
freshly ground pepper
grated fresh parmesan cheese for serving on top

Cook the pasta according to package directions.

Saute the garlic and onions in 2 Tbsp butter and the olive oil in a saucepan over medium heat until soft. Pour in the vodka. Cook and reduce 2-3 minutes then pour in the tomato puree. Stir the mixture until its throughly combined then reduce to low heat. Pour in heavy cream. Stir to combine, then turn to the lowest simmer possible. Sprinkle in the red pepper flakes and salt and pepper to taste. Finally stir in the remaining 1 Tbsp butter. Pour in the drained pasta into the sauce and toss to combine. Sprinkle on the parmesan and more red pepper flakes if desired.

*I used tomato sauce and it was really RUNNY!!! SO I poured about 1/2 C. out and added 1 small can of tomato paste and then added about 1/4 C. more vodka and it turned out PERFECT! so yummy!!*

Chicken & Broccoli Stir Fry



Cut up a few chicken breasts ( I used tenderloins and I used about 5)


steam a bunch of broccoli cut up into small florets- dont over cook as it will be cooked in wok

 cut up some carrots lengthwise (i used baby carrots and cut each one into 6 pieces) - I steamed this with broccoli. I also added 1/2 c. chopped onions to them while steaming as well

For the sauce mix together:

6 Tbsp soy sauce
3 Tbsp orange juice
2 tsp red wine vinegar
3 tsp sesame oil
3 tsp red pepper (if desired)
2 Tbsp cornstarch
1/2 tsp pepper
1 tsp ginger
1/2 tsp garlic powder

Mix well and set aside.

Set a wok over med heat and coat with 1 Tbsp sesame oil.. When oil is hot cook the chicken until done.
Add the sauce let it cook down a bit then add the carrots and broccoli. I also added a handful of cashews. It turned out super yummy



 Cook about 5 min. Serve over rice.

Chicken & Rice


Add 1 1/2 C RAW rice to a 13X9 casserole dish

Add about 1/2-1 C of shredded cheese on top of rice
Add chicken breasts ( I used 3 Huge ones and just cut in 2-3 pieces), 3 C. cold water, 1 can cream of chicken soup, 1 pkg onion soup mix (I didnt have any so I crushed 2 beef boullion cubes & some onion powder and it tasted the same) and whatever seasoning you want on chicken.

Bake at 350 for 1 hour

add 1/2-1 C. shredded cheese and bake for 30 more min (cover with foil)

And there you have it!! yummy dinner!!! my kids loved this!!

Mexican Casserole



I found this recipe over at The Sisters Cafe. I have to say it was AWESOME!!!


1 lb. ground turkey or lean ground beef
1 large onion, chopped
1-2 garlic cloves minced
1 packet Taco Seasoning mix (1/4 cup)  (I only used a few tablespoons)
chili powder to taste
1 can black beans, drained and rinsed
1 can diced tomatoes, drained (if you like spice i recommend ones with chilies in them)
1 can cream of mushroom soup
8-10 corn tortillas (12 oz package)
3-4 cups shredded Cheddar cheese
Haas avocado, sliced
sour cream
fresh cilantro

Brown meat with diced onions and garlic over medium heat. Add chili powder, taco seasoning, black beans, tomatoes, and cream of mushroom soup. Stir to combine and warm through. In 9x13 inch pan, place a small amount of meat mixture on bottom (so tortillas won't stick). Place a layer of corn tortillas down, then a layer of the meat mixture, and sprinkle on a little cheese. Repeat with another layer of corn tortillas, a layer of meat mixture... and top with remaining shredded cheese. Bake in a preheated oven at 350 degrees for 30 minutes. Serve topped with sliced avocado, sour cream, and fresh cilantro.

* When layering to tortillas I found it much easier to rip them in half so you are using 6 halves on each layer. That way the tortillas are spread out a bit more*

-you could EASILY make this into a vegetarian meal by taking out the meat and adding a few different kinds of beans. -

Dinner in a Pumpkin



I Have to say I've never tried this before. I googled some recipes and kinda combined them to do what I wanted.
Brown ground beef (or turkey) with some onions and garlic. Drain grease. Put into a pumpkin (remove seeds and guts). Add a can of cream of chicken soup. Add rice. I used a package of wild rice. Add beans. I used some fresh I had frozen. Next time I will cook the beans first. Add a can of mushrooms. Add a can of tomato sauce. Mix all together. Put on cookie sheet and put top of pumpkin on. Bake at 350 2-3 hours until pumpkin is tender. Be careful when taking lid off. Lots of liquid will come pouring out. When serving cut some of the pumpkin with it.
It is delish!

Chicken Noodle Soup



Chicken Noodle Soup

1 pkg homestyle noodles (or you can make your own)
sliced up carrots (its prob about a cup or so)
some corn (if you want again its about a cup)
chicken (i use tenders )
celery (I used about 2-3 stalks)
tomatoes (about a cup)

Just add everything to a crock pot add some water to cover everything and some then add 2-3 chicken bullion cubes. I cook on HIGH for about 5 hours otherwise the carrots will NOT be done. Then I take a fork and shred the chicken. It breaks apart super easy. Then about 45 min before you want to eat add the noodles and cook until done. 
Sometimes I will cook mashed potatoes and serve over it

Turkey Pot Pie



I forgot to take the after pic so this is right before it went in the oven.

bear with me i didnt measure


i chopped up turkey (you could use chicken) about a cup
i used my own potatoes cooked and cubed i made too much i'd do about 1/2- 3/4 C
or if you dont want that you can use a can of potato soup
if you dont use the soup then you will need 1 can of cream of chicken soup
about 1/2 cup milk
1/2 c. corn
1/2 c carrots (really any veggies you want)
2 pie crusts (one for top and bottom)
i used a deep dish for bottom i liked that better cuz you can fit more in. then i use a reg on top. take the one for top out of the tin lay on wax paper until flat about 15-20 min then after you get everything in the bottom put on top and pinch closed cut slits and bake at 350 for abotu 20 min or until crust is brown.
COOK ALL VEGGIES FIRST!!!
season with whatever you want.

Chicken Quiche

Chicken Quiche

2 C.cubed cooked chicken
1 unbaked pastry shell (9 inch)

1/4 C bread crumbs
1 Tbsp minced dried onion
1/2 tsp salt
1/2 tsp dried parsley flakes
1/2 tsp poultry seasoning (i didnt have any so i used a rotisserie chicken seasoning)
1/4 tsp dried celery flakes
3 Tbsp flour
2 eggs beaten
1 1/4 c milk
*i added about a cup of chopped fresh spinach*

place chicken in pastry shell. in a small bowl combine the bread crumbs, onion, salt, parsley, poultry seasoning and celery flakes. Sprinkle over chicken. Add spinach (if using)

in another bowl combine flour and eggs mix until smooth.
gradually stir in milk pour over bread crumb mixture.
it should look like this before pouring it over

bake uncovered 350 for 40-50 min or until knife inserted in ceter comes out clean.

(i added fresh chopped spinach after the bread crumb mixture it was yummy)
for those vegetarians you could omit chicken and just do lots of veggies

Sweet and Sour Chicken



Sweet and Sour Chicken

3 lbs chicken

Sprinkle each piece of chicken with garlic power and salt. Dip in 3 well beaten eggs then roll in a mixture of ¾ C flour and ¾ C corn meal. Brown in oil and lay flat in a baking dish. Cover with sauce and bake at 350 for 1 hour turning once.

Sauce:

2-3 cups chicken broth

1 Cup white sugar

½ C. Ketchup

2/3 C. white vinegar

2-3 Tbsp soy sauce

Serve sauce over rice.

Tater tot casserole

Tater Tot casserole

1 (32-ounce) package frozen tater tots

1 (16 ounce) container sour cream

1 cup shredded Cheddar cheese

1 (10.75 ounce) can cream of mushroom soup

1 (6 ounce) can French-fried onions

Preheat oven to 350 degrees. Grease a 9x13 inch-baking dish. Arrange tater tots in the prepared baking dish. In a mixing bowl, combine sour cream, cheese, and mushroom soup.

Pour this mixture over the tater tots. Sprinkle onions over the top of the casserole. Bake in the 350 degrees F (175 degrees C) oven for 45 to 60 minutes.

If desired, add 1 can of other vegetable such as green beans, peas, or corn.

TATER TOT CASSEROLE

1 lb ground turkey cooked, seasoned (can use chicken)

1 2lb bags tater tots

1 can cream of mushroom

½- 1 cans evaporated milk

1 cans cream of chicken soup

1 C. shredded cheese

Brown meat & place in large cass. dish.

Cover with tater tots. Mix soup, cheese & milk together.

Pour over top. Bake at 350 for 1 Hour.


*i like to do a variation of both*

Spicy Romano Chicken Pasta



This is really similar to Carino's dish. Super yummy


2 T. butter
2 boneless, skinless chicken breasts (cooked, thinly sliced)
1/2 C. sliced mushrooms
1/4 C. diced green onions
1/8 C. sliced sundried tomatoes
Alfredo sauce (made from recipe below or from a jar)
1/4 cup Grated Romano cheese
1 can artichoke hearts, drained and chopped
Cayenne pepper to taste
Bowtie pasta, cooked

In pan melt butter, sauteƩ chicken, mushrooms, green onions, and sundried tomatoes until hot.



Add Alfredo sauce and Romano cheese. Simmer.

Add cayenne pepper to taste. Serve over bowtie pasta. ENJOY!
Alfredo Sauce
1/2 C. butter
2 oz. cream cheese
2 C. heavy cream
3/4 tsp. garlic powder
Salt
Pepper
1/2 - 3/4 C. Parmesan cheese

In saucepan, melt butter. Add cream cheese, heavy cream, garlic, salt, and pepper. Whisk constantly and bring to a boil. Simmer for 20 minutes, stir every few minutes. Remove from heat and stir in Parmesan cheese. Cover and let it sit for 5 minutes.
